There are dishes worth driving long distances for, and then there are dishes worth flying thousands of miles for.  The Bombolotti alla Carbonara at Taverna Trilussa in the Trastevere district of Rome is one of these such dishes. A classic Roman recipe where rich white wine-browned bacon blends with a sauce comprised of simplicity in the form of egg, parmesan cheese, and pepper. The result is a fusion that simply cannot be explained and trust us, every single dollar spent and mile flown to reach this place will never be regretted.
